(Having to do with the permit for"Malissa's Pizza") Dear David : With the help of the building owners maintenance firm, we have researched the capacity and adequacy of this interceptor. Enclosed, please find the following: 1. A letter from"A-1 Waste Management, Inc., the firm servicing the grease Interceptor. I suggest you examine the second paragraph of this letter and in cooperation with the Owner set up a servicing cycle which will insure the future performance of this system. Since the calculations demonstrate the inadequacy of the system, perhaps a meeting including the following: owners representative;yourself; a utilities representative; and a representative of"A-1 Waste Management" and Sean Akoglan at the site might help to resolve this matter. If necessary, the tank could be exposed and its capacity discussed. The meeting might result in a letter from the Owner changing the servicing cycle from 90 to 60 days,with a report to be furnished by"A-1" after each service call to show how the system is functioning. This monitoring may result in a shortened service cycle or whatever may be indicated by the facts. 2. A specification with drawing depicting the unit installed from `Standard Precast, Inc. 3. The calculations prepared by the Owners management firm demonstrating the adequacy of the existing Grease Interceptor for all four restaurants in the center. Dickinson Commercial Ponte Vedra Beach, Fl. 32082-5701 Re: Grease Trap at North Beach Center Mr. Huffman We have been servicing the 3000 gallon grease interceptor located at North Beach Center(725 Atlantic Blvd,Atlantic Beach, FI, 32233) once every 90 days for approximately 18 months. During this time'period the level of solids in the trap has consistently been in the neighborhood of 26%of the total volume of the tank. In my experience, as long as the total solids volume does not exceed 40%-50%the total volume of the Interceptor it will continue to function normally. I believe if the pump out frequency were reduced to 60 days this tan could handle another restaurant with no problem. My suggestion would be for us to try that and adjust tha frequency so that the solids content does not exceed 25%. As we do in the JEA's F.O.G. program In Jacksonville.
